This is a dish that I prepared daily at SOS in London. It was one of the favourites on the menu. We easily sold 80 portions of this goodness a day. Enjoy this sweet and saucy delicious pudding that is really easy to make!
Serves 4-6
Ingredients –
Sauce:
- 375ml cream
- 125g butter
- A pinch of salt
- 100ml sugar
- 15ml apricot jam
- The juice of one tin of pears (430g)
Pudding:
- 30g butter
- 100ml sugar
- 1 egg
- 250ml cake flour
- A pinch of salt
- 125ml milk
- 5ml bicarbonate of soda
- 45ml apricot jam
- 20ml white vinegar
- 1 x tin of pears, roughly chopped (430g)
Method:
Sauce:
- Cook all of the sauce ingredients together just until it starts to boil and all of the sugar is dissolved.
- Set aside
Pudding:
- Preheat your oven to 180˚C
- Beat the butter and sugar together until creamy and smooth. Add the egg.
- Add the jam and mix well.
- Sift the dry ingredients except for the bicarbonate of soda together set aside.
- Dissolve the bicarbonate of soda in the milk and let it fizz for a few seconds.
- Now add half of the dry ingredients to the butter mixture. Add the milk and bicarbonate mixture. Then add the rest of the dry ingredients.
- Add the vinegar to the mix. Now add the pears.
- Pour the mixture in a baking dish of your choice. Pour half of the sauce over the batter.
- Cover with tin foil and bake for 35minutes.
- Remove from the oven. Remove the foil and pour the rest of the sauce over evenly. Return to the oven for another 15 minutes uncovered.
- The pudding will be soft and saucy when removed from the oven. It is a much softer texture than your traditional malva pudding.
This dessert is best served warm with lots of thick pouring cream on the side.
